Asparagus Prosciutto

We have offered seasonal pizzas since 1993, and it all started with the Asparagus Primo. The inspiration? Spring in Washington State and the glory of asparagus season—we just had to find a way to celebrate! We’ve modified the recipe over the in the intervening years, but always featuring stellar Washington homegrown asparagus. We roast it until it’s tender and layer it with La Quercia prosciutto, Taleggio, a mild cheese with a fruity tang, and mozzarella over an olive oil base.

BBQ Chicken

Hatch, New Mexico is the self-appointed “Chile Capital of the World.” Their claim to fame: the eponymous chile. A few years ago, it was hard to find Hatch chiles outside of the American Southwest, but the long, spicy green chile with medium spice and a smoky flavor has found its way throughout the country. Our BBQ Chicken Primo features chicken, pickled red onions, roasted Hatch chiles and mozzarella over barbecue sauce. After baking, we sprinkle it with fresh cilantro.

 

Orange Cream Gelato
