Two New Seasonals and the Return of a Favorite Gelato

Our food team has been hard at work testing and tasting — and yes, more testing and tasting. It’s a challenging job, combining proteins, fats, and carbohydrates to find the optimal balance of flavor and texture. Failure is part of the process, with breakthroughs being the rare but celebrated exception. When they occur and the tasting panel is unanimous in its approval, we eagerly add the creation to our seasonal rotation. Introducing one new pizza is newsworthy; unveiling two simultaneously is almost unheard of. 

Our first new seasonal, the Pancetta Cauliflower, originated with a single ingredient as inspiration. Especially during the winter months, we love to roast cauliflower, which brings out an irresistible creamy sweetness. The challenge was finding a suitable companion. We tried pairing it with several strong, salty flavors. The breakthrough was the way the robust flavor of meaty pancetta highlighted the cauliflower’s gentle sweetness. To round out the winning combination, we chose a blend of fontina, mozzarella and Parmesan cheeses, topped with a sprinkle of parsley, all served over a base of olive oil and red pepper flakes.  

Inspiration for the second new seasonal pizza began with a favorite Italian pasta: Rome’s celebrated Cacio e Pepe. The classic dish exemplifies the simple joy that can be found in a dish made with time-honored techniques and a few select, high-quality ingredients. Finding a way to translate the essential flavors into a pizza took more than a little fiddling, but once we found the right combination, our tasters couldn’t get enough of this one. Our Cacio e Pepe pizza features a mix of creamy mozzarella and sharp Pecorino Romano cheeses with black pepper over a rich base of ricotta, cream and Parmesan.  

Repeated calls for another encore bring Gelatiamo’s Peanut Butter Cup Gelato back to our seasonal menu. Sure, there are a few palates out there that don’t find peanut butter and chocolate appealing, but for many of us, it’s a perfect union. Its sweet-salty siren song is hard to ignore, and in our culinary travels we’ve yet to find a better homage to the peanut butter cup than Gelatiamo’s. Their sophisticated twist on the beloved classic has a salty-sweet, creamy peanut butter gelato base, studded with chocolate peanut butter cups. Indulge in a pint before it disappears!
