Roman Holiday: The Story Behind The Pie

Last spring, I went to Rome over spring break with my family, back to the city I used to live in when I taught history at the Marymount International School. We planned to eat, to soak in the timeless beauty of the eternal city, and buy some Italian movie posters to hang in the Pagliacci stores. What I didn't expect was to bring home a whole new pizza for Pagliacci! Continue on to read the story behind the pie. [...]

The Rebirth of Sand Point: Slice Bar, New Dining Room & Expanded Hours

Some remodels consist of a few cosmetic upgrades and a load of promotion. Not our Sand Point remodel. After 20 years of brisk business, we decided a top-down overhaul was needed. Construction was equivalent to building out a new store—while it's open for business! We were open every single day, which required a lot of coordination between the crew and the contractor. It also needed a flexible approach to business as usual. Customers coming for pickup were instructed to go to the back door. Read more about our remodel here! [...]

At Pagliacci, choosing the best ingredients for our pizza is one of our most important jobs. There's a lot that goes into deciding which ingredients we want to use. Read our blog to learn the story behind the cheese and why we are proud to have worked with them for over a decade. [...]

Pizza Margherita

The pizza Margherita, beloved for its simplicity—tomato, mozzarella, basil, olive oil, and sea salt—is the standard from which today's pizza evolved. The origin story is one worth telling. In 1889, the king of Italy, Umberto I, and his wife, Queen Margherita, were in Naples. A local piazzolo, Raffaele Esposito, made her three pies. Her favorite had the red, white, and green of the Italian flag (tomatoes, mozzarella, basil), hence, Pizza Margherita. Our Margherita pizza may not be certified by the Italians, but it is a Pagliacci classic and an ode to pizza history. When you're in the mood for a pizza on the lighter side, composed of the simply of elemental pizza ingredients of the highest quality and flavor, give it a try. [...]
