SALUMI PRIMO
Our friends at Salumi Artisan Cured Meats have been busy preparing a special batch of finocchiona salami for our latest seasonal pizza. Salumi’s finocchiona salami is seasoned with cracked fennel, black pepper and a touch of curry. It takes several weeks for the salami to cure and it is well worth the wait. The end result is a wonderful flavor profile that has made it a favorite artisan meat at Salumi. We combine the salami with Mama Lil’s goathorn pickled peppers, roasted fennel, parsley and mozzarella, fontina and ricotta cheeses on an olive oil base.
