Here at Pagliacci, we pride ourselves on using fresh local ingredients as much as possible. We’ve been using many of them for years. In the case of CasCioppo’s, since we opened. We tend to talk a lot about the people who supply us with our seasonal products. So, we wanted to pay tribute to those people who supply us with our ingredients every day. And we used our pizza boxes to do it. While we look to local vendors as much as possible, we recognize that there are some products that we just can’t find close to home. There are many great products all over the world, and only one place in the world to get certain types of products. For instance, Italy is still the only place to get Parmigiano Reggiano!
Here are the producers featured on our pizza box:
SPICY PEPPERONI
Produced for Pagliacci by Salumi located in Pioneer Square. Their artisan cured salami features Washington pork.
CASCIOPPO BROTHERS
Tony CasCioppo has been making sausage for Pagliacci for nearly 30 years. His signature Italian sausage is made to our specifications in Ballard.
INABA FARMS
This is the pepper of choice for the Washington growing season. This third generation family farm in Wapato, Washington supplies peppers to Pagliacci as well as Mama Lil's.
LAURA CHENEL
Laura Chenel has been on the forefront of the natural food movement in the United States. Her goats produce some of the finest, most consistent goat cheese available. We are proud to use her goat cheese from Sonoma County, CA.
TOMATOES
Our tomatoes are from Sacramento Valley. They are picked and canned for our pizza sauce within 24 hours in a canning facility that's only minutes from the fields. We still make our sauce fresh in the stores every day.
LA QUERCIA
We are proud to introduce La Quercia to Seattle. Although the prosciutto is cured in the Italian tradition, the hogs and the curing are done in Iowa. Yes, Iowa! See our blog about La Quercia.
GELATIAMO
Maria Coassin's gelato and sorbet are handcrafted in the heart of Downtown Seattle. Each flavor has its own unique recipe with the perfect balance of ingredients. Don't forget to try the latest seasonal flavor.
MOZZARELLA
John Rumiano is one of the nicest people in the food business. He is a third generation cheese producer out of Humboldt County, CA. Rumiano produces a whole milk mozzarella made with milk from Jersey cows. These Jersey cows roam free in the green fields of Northwestern California.
MAMA LIL'S PEPPERS
These unique peppers continue to grow in popularity. The pickling is an old family recipe of Howard Lev's. The peppers are from Eastern Washington and pickled by Howard himself during each fall harvest.
MUSHROOMS
Our mushroom provider is Ostrom's which is located in Olympia. Their mushrooms are harvested daily and arrive to our locations within 48 hours of being picked.
BREADSTICKS
Our breadsticks are made fresh everyday by our favorite local bakery, Macrina. They are hand formed each morning and then delivered and baked in our ovens the same day.
PENDLETON MILL
The plant where our flours are milled is in Blackfoot, Idaho. The wheat is grown throughout this region.
